Ingredients

  • 400 g di-go ready mix or BIO mix for Mediterranean bread
  • 7 g di-go dry yeast
  • 380 ml warm water
  • 150 g cherry tomatoes
  • 1 clove of garlic
  • fresh rosemary
  • 50 ml olive oil
  • pinch of coarse salt

Preparation

  1. In a bowl, add 400 g Mediterranean bread mix or BIO mix and 7 g di-go dry yeast, then gently mix. Add 380 ml warm water and mix with a spoon for about two minutes.
  2. Leave the dough in the bowl, cover it with a kitchen towel and let it rise in a warm place for about 15 minutes.
  3. After this time, lightly oil your hands with olive oil and lift and fold the dough. Repeat this process several times.
  4. Cover the bowl with a towel again and let the dough rise for another 15 minutes.
  5. Grease a round mold or cast iron dish with olive oil and place the dough in it. Also lightly oil the dough with your fingers on all parts.
  6. Place cherry tomatoes briefly sautéed in olive oil with minced garlic on top of the dough. Evenly distribute rosemary and a pinch of coarse salt over the entire dough.
  7. Place the pan in an oven preheated to 210-220 degrees Celsius (with both heating elements on), on the lower rack. Bake for 35 to 45 minutes.
  8. Focaccia can be served warm or cold.
